Entrevista
I applied online 3-4 weeks ago, then I received an (unexpected) mail from a hiring manager, where she told me I could apply as Italian language technical advisor. I obviously replied positively and after an hour she called me on cell phone to ask for my availability, if I ever had an interview with Apple, and to explain by voice all the informations sent by email.
After that I received a second mail where they explained the details of the interview process itself. The first step is a "technical assessment" interview using Hirevue: 30 questions, some moderately difficult, from my point of view, to easier ones, like "what happen if I increase exposure in Aperture".
After having complete the first technical test, I received a mail from Hirevue where they told me that some Apple person would contact me soon. After 3 days I am still waiting for Apple actual response. I will let you know any update
There are multiple rounds of interviews. Last round is with a panel of managers. Questions are fairly easy. A decision will be sent to you by the recruiter (first person you interviewed with via phone).

Initial application submittal through careers at Apple page. Then you have a 30 minute phone call with an Apple recruiter to further explain the details of the position, and validate your skills as they relate to the job description. They also ask a couple open ended questions and a couple technical ones. (e.g. Why apple?). Then you have an hour long video interview with a hiring manager. After that you will get a phone call to let you know you have the job and they go over start date, final pay, etc.
