You sit and talk with the manager of the cafe you would like to work with. In my interview the district manager also joined and we talked about the cafe and my experience with coffee.

Took about 15 minutes. Staff is friendly and will make you feel welcome and offer you a drink. Manager just wants to get to know you and get a feel for what kind of worker you are

There were a lot of things they asked me, but it was a very traditional interview. Availability, experience, and more personal (getting to know you) questions, etc.
Simple interview which gave the interviewers confidence in my abilities to be a Barista. They were good communicators and I felt at ease. The interview lasted about 15 minutes and I felt confident afterwards.
