Open GI use pairing in interviews as the teams follow the XP methodology, your screen sharing was a pairing interview.

The interview process is little wired, asked to develop some code with screen share, my personal feeling is that probably they are working in very complex applications or company does not have any budget constraint in term of proper utilization.
