I begin with my COGS based on seasonal sources, local accessibility, and awareness of current trends in global fare. My style of menu development is reflective of my love for America Progressive/ Modern Technique. One I know how much I need to sustain my outlet, then I can start to shop for the products that will allow me to present creativity, as well as craftsmanship.
