The person interviewing me told me he had issues with project management, promising to do too many things in such little time. I told him I have a similar problem (since I'm early in my career) and that I tend to take on too much work at once. I'd rather express my need for time (as long as it's reasonable) to get less jobs done correctly than rush through a million jobs and do just an average job. Obviously, as time goes on and I get better at my position I would be able to take on more tasks and complete them in a shorter time. He told me this was a good answer, seeing as project management can be difficult and often difficult to judge.
