I've found that if someone goes over on time significantly, it can show you that they're not organized. It was an hour interview that went almost two hours with lots of irrelevant questions about classes I took 15 years ago. Interview 3: In person with CEO who was also the department head Interview was CEO seemed like something wasnt right. I later found out he was lying about key things including his experience as well as other key things that made me take the position I was offered. Interview 4: Lunch with 3 employees. This was pretty cool. You go out to lunch with a few people from the company and ask questions and get to know them more.
